A 200-year-old winery

An 18th century winery with the latest technology

The winery is equipped with the most modern equipment and great care has been taken with the exclusive design of the stainless steel tanks, following the criteria marked by the oenologist. 20 tanks with capacities of between 10,000 and 20,000 litres allow absolute control to be taken of the fermentation and maceration times, as well as being able to differentiate both the reception of the distinct types of grapes and the plots from where they come.

All the tanks have been specially designed for the space in which they are placed. Their capacities are small in order to allow for differentiated vinification that depends on the
grape varieties and the plots from where the fruit comes. All this is done with the objective of always obtaining the highest quality as possible.

It is worth noting the wide stainless steel structure above the tanks, which makes it possible to work intensively and, furthermore, allows the pumping over process to be carried out manually.

One of the oldest wineries in Castilla-La Mancha

The winery with its Mudéjar bricks and typical Toledo-style walls blends in perfectly with the land that surrounds it and it adapts to a land where olive trees and vineyards have been the protagonists for centuries.

Inside, the original coffered ceiling that runs through the elaboration and aging rooms catches the eye: a beautiful use of wood in architecture, which endows the premises with a noble air.

Since the whole surroundings were carefully restored, the winery has been recognised as a Cultural Heritage. A walk around the premises means becoming immersed in one of the best examples of the noble Toledo farmhouses of the 18th century. Reposing in the aging room is a park of 700 barrels made of French, Hungarian and American oak, with different capacities and toastings.

The whole room is equipped with the latest advances in refrigeration and humidification, thus ensuring the elaboration and aging processes are carried out in the best conditions as possible
